Healthy Trifle Recipe

Ingredients:
Sponge
3 Eggs separated
75 g millet flour
50 g tapioca flour
125 g Lakanto Monkfruit sugar
½ teaspoon baking powder
Filling:
1 cup yogurt
1 cup heavy cream
And
Cherries or fruit of your choice
Instructions:
Preheat oven to 390 degrees
Line a baking sheet with parchment paper
Beet the egg whites while slowly drizzling in the sugar until stiff
Fold the egg yolks into the egg whites
Strain the flour and baking powder then fold in the egg mix
Spread evenly on baking sheet and bake for 10 minutes.
Immediately place the baked sponge onto a kitchen towel coated with some sugar. Then peel off the parchment paper and let it cool down for about an hour.
Filling
Wisk up the heavy cream and fold into the yoghurt.
Assembly
Cut the sponge and place into a dessert glass, then cover with cherries (or the fruit of your choice). Followed by the creamy yogurt. Repeat. Decorate the top with crumbled sponge and some of the fruit.
