Carrot Cake Chia Pudding
This chia pudding will remind you of a carrot cake! It is an easy make ahead dish, with lots of goodies packed in it! Enjoy....
3 tablespoons chia seeds
3/4 cup almond milk
1 tablespoon maple syrup
1/2 teaspoon ground cinnamon
1 carrot, grated
1 tablespoon raisins
1 tablespoon pecans, walnuts, or almonds
1. Combine the chia seeds, almond milk, maple syrup, and cinnamon in a small bowl and use a whisk to stir it together. Fold in the shredded carrots.
2. Place the pudding in the fridge for at least 15 minutes to thicken up, or you can store it tightly covered overnight for a quick breakfast the next day. Garnish with raisins and nuts just before serving, if desired.
